I love food. I love to eat it, prepare it, and if my personality allowed it–I would roll around in it. The day I was diagnosed with Celiac Disease was a dark day. Not so much because I learned that my small intestine was being attacked by gluten, but because I would no longer be able to enjoy the delicate layers of a croissant or the satisfying crunch of the cone holding the ice cream. Not to mention pizza…
My daughter was diagnosed last summer, so I’ve also come up with some new kid-friendly gluten-free treats for her, which have swiftly become favorites of our household’s gluten-free and wheat-eaters alike.
